With the passage of time, the defensive function of the street diminished and the road was blanket and incorporated into the surrounding buildings, becoming an inhabited street. It was at this stage that it became the heart of the birocciai quarterthose who transported chalk from the quarries above the country as far as the plain.

The name 'Donkey Way

The name "Via degli Asini"It is derived from the animals that the birocciai used to transport chalk. Donkeys travelled this road daily, contributing to the village's economy. The stables were located in front of the arches, while the dwellings of the birocciai were on the upper floors. In addition, the transport wagons, called birocceThey were stored in spaces dug directly into the chalk rock, accessible from the square below.

The Via del Borgo is characterised by arched windows of varying sizeswhich give the route a picturesque and fascinating appearance.
